Potato flour is mainly used for the production of sweeteners, as a substitute for wheat flour in baking and pastries, and as a thickener and stabiliser in ice-creams, sauces, soups and jellies. It is also used in baked products to increase the sponginess of biscuits and cakes. It can also be used in the production of liqueurs.
